The Quest to Do Some Holiday Baking

Today I spent a lot of time in the kitchen, my mom made Cuban-style flans and from the leftover egg whites, I spent the day making meringue cookies. I may not do a lot of baking but my piping skills on these meringue cookies were perfection.

I’m also planning on baking a signature dish of mine which is corn casserole, I used to not really like my own casserole and I knew it was good because my husband and family request it every year. And now I actually do enjoy eating it even though it’s not my favorite thanksgiving side dish.
